These Black Summer Truffles (tuber aestivum) are harvested in July and August then minced and preserved in olive oil to last up to18 months, retaining their rich, earthy flavour and firm texture. They work brilliantly mixed into risotto and pasta, as a garnish with meat, or even as a luxury topping for nachos.
