In a double boiler, melt the chocolate and cream over a very low heat, stirring constantly. Add the hot water, whisk until smooth and set aside.

Pour the whipping cream and icing sugar into a bowl and beat with an electric mixer until it forms soft peaks.

Assemble the nests starting with the meringue, add a layer of vanilla ice cream, a layer of chestnut purée, the whipped cream, drizzle with the chocolate sauce, and sprinkle with the pistachios.
