Cook the wholegrain rice and petits pois as per their instructions and gently toast the pine nuts.

Toss the cooked wholegrain rice, cooked petits pois, half of the feta, cherry tomatoes, chopped fresh zaatar and fresh mint together in a large bowl.

Add a generous drizzle of olive oil and the juice and zest of one lemon, and mix gently to combine.

Season with salt and cracked black pepper to taste, then top with the remainder of the feta and toasted pine nuts.
