Method
Preheat the oven to 200°C, gas mark 6.
Heat the olive oil in a large non-stick saucepan over a medium-low heat. Cook the onions and potatoes together, stirring gently but avoiding breaking the potato slices. Cook until the potatoes are just tender, but still lightly firm. Remove from the pan with a slotted spoon, set aside and season with salt and pepper.
In a bowl, whisk the eggs then add the Waitrose Cooks' Ingredients Chilli & Garlic Sauce, the Waitrose Cooks' Ingredients Shakshuka Sauce, Waitrose Cooks' Ingredients Crispy Fried Onions, salt and pepper. Pour over the potatoes and onions.
Cook for a few minutes over a low heat, just until the sides start to cook, for approximately 5 minutes.
Place the pan in the oven and bake until the eggs are cooked through and the top is firm, but not dry, approximately 5-10 minutes.
Let the tortilla cool down before inverting onto a plate. 7 Garnish with the chopped parsley and Waitrose Cooks' Ingredients Crispy Fried Onions to serve.
