Method
Preheat the oven to 160ºC. In a bowl, mix the olive oil, tomato paste and toss it through the cooked lamb.
Place the lamb in a roasting tray and add all the spices, sugar, black garlic, onions, rosemary, thyme and chicken stock. Cover the tray tightly with foil and place in the oven for 45 minutes to 1 hour.
Remove the tray from the oven, taste the cooking liquid and add salt if needed. Add the cooked vegetables, cover with foil again and cook another 20 minutes or just enough for the vegetables to cook through with the flavours of the lamb.
Remove from the oven, garnish with pomegranate seeds and fresh herbs, if preferred.
