Put the quinoa, 100ml almond drink, the vanilla extract and 100ml water in a small saucepan. Bring to the boil, then reduce to a simmer. Add the remaining almond drink and the maple syrup and stir, then simmer with the lid loosely on for about 15 minutes until the quinoa is tender.

Divide the porridge between 2 bowls and serve topped with slices of orange, a scattering of toasted almond flakes and a drizzle of maple syrup if desired.
